Local Viet Cuisine

The Vietnamese Cuisine is another popular cuisine of Asia. The culinary differences in Vietnam may be categorized to three regions. The North is traditional while the Southern cuisines were influenced by foreign taste. Central Vietnam also varies from the North and South with its familiar use of side-dishes. A typical meal, like other Asian countries, may contain a serving of rice along with other dishes. The meal often comes with fish sauce used for dipping. Noodle soups are also widespread and comes in different varieties.

Main Dishes

  • Banh Bao - a Vietnamese dumpling made with pork, eggs, mushroom, onions and vegetables.


  • Banh Bot Chien - fried rice flour cake with an egg, over radish and spring onions. It is served with soy sauce dip.


  • Banh Beo - steamed rice cake stuffed with shrimp, onions, mung bean paste, fish sauce, vinegar and oil.


  • Banh Chung - sticky rice stuffed with pork, mung beans and black pepper then wrapped in herb leaves. It is a traditional food eaten during Tet, the Vietnamese Lunar New Year.


  • Banh Mi - an affordable Vietnamese sandwich with radish, onions, pickled carrots and meat/tofu as its filling.


  • Banh Xeo - pan-fried pancakes having fatty pork, shrimp and bean sprouts as filling. It is served with lettuce leaves and herbs with Vietnamese fish sauce as dipping sauce.


  • Bo 7 Mon - 7 courses of beef usually served during weddings. Beef is prepared as 7 kinds of dishes and served with dipping sauce.


  • Cha Gio - egg rolls/spring rolls containing meat, shrimp, mushrooms and other ingredients of choice such as carrots or cabbage. This dish is known as Cha Gio in the South and Nem Ran in the North.


  • Cha Lua - Vietnamese ham made of minced pork, potato starch and fish sauce. It is cooked in banana leaves by steaming. It is usually eaten with rice crepes.


  • Chao Tom - grilled shrimp paste on sugarcane sticks served with fish sauce. It is often served during special occasions.


  • Com Tam - cooked broken rice often served with grilled pork. It may also be served with leafy greens, pickled vegetables and prawn.


  • Ga Xa - a chicken dish with great aroma. It is also known as Lemongrass Chicken.


  • Gio Lua - lean pork pie. it is prepared by boiling pork wrapped in banana leaves.


  • Goi Cuon - Vietnamese spring roll made of pork, shrimp, herbs and rice noodles wrapped in rice paper. It is served cold, not fried. It is also known as summer rolls.


Noodles

  • Banh Canh - noodle soup with different varieties. The noodles could be mixed with crab soup, fish in spicy broth, oiled pork with herbs or shrimp-flavored broth mixed with coconut milk.


  • Bun Bo Hue - a noodle soup made with rice noodles, oxtail, pig knuckles and beef leg. It may also contain jellied pig blood. It is added with with lemongrass for aroma and served with bean sprouts, lime, and banana blossoms. The soup is semi-spicy or not spicy at all.


  • Bun Mang Vit - duck soup with rice noodles and dried bamboo shoots.


  • Bun Oc - snail noodle soup, a popular dish consisting of rice noodles and cooked snail.


  • Bun Rieu - noodle soup consisting of crab meat in tomato broth. It may be served with shrimp paste topping.


  • Bun Thit Nuong - a popular noodle dish made with cucumber, bean sprouts and herbs topped with grilled pork.


  • Cao Lau - a noodle dish topped with meat and greens.


  • Com Hen - a popular and affordable dish made from rice, noodles, meat, bamboo shoot and green vegetables. The broth used is taken from boiling mussels. The dish is spicy but is sometimes served cool.


  • Hu Tieu - a noodle soup in pork broth. There are different variations of this dish depending on the place. Two famous versions are Nam Vang and My Tho.


  • Mi Bo Vien - egg noodle soup with beef/fish balls.


  • Mi Quang - a noodle dish with pork chops, egg, peanuts, shrimp, beef sausage, vegetables, lettuce and rice cracker. The broth is not thick and it does not cover the noodles.


  • Mi Xao - a stir-fried dish with egg noodles, vegetables and meat or seafood.


  • Pho - rice-noodle soup with beef or other meat such as chicken. It is a traditional dish garnished with spices.


Soups and Stews

  • Bo Kho - beef stew cooked with spice and herbs served hot, especially during chilly weather. It is often served with baguette or noodles.


  • Canh Chua - sour soup made with fish, tomatoes, bean sprouts, tamarind and pineapple. It is also made with chicken, shrimp and eel. There is also a vegetarian version.



Desserts

  • Che - a sweet pudding or soup made of sticky rice or beans. It has many varieties dependent upon the ingredients used. It may either be served hot or cold.


  • Xoi Nep Than Dua - sticky rice with coconut milk and sugar. It is served hot or cold.
